Ingredients
  

  • 4 large potatoes, peeled and cubed
  • 6 large eggs
  • 250g grated cheese (cheddar or mozzarella)
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, chopped
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp oil

Instructions
 

  • Preparation Steps:
    Heat oil in a non-stick skillet and cook the potatoes until golden and tender.
    Whisk eggs with salt, pepper, garlic, and parsley in a bowl.
    Mix the cooked potatoes and eggs together.
    Pour half of the mixture into the pan, add cheese, and top with the rest of the mixture.
    Cover and cook on low heat until the edges are golden. Flip to cook the other side until golden and set.
    Serve with fresh parsley as garnish.
