Ingredients
  

  • 4 cups whole milk
  • 1 cup granulated sugar
  • 3 tbsp cornstarch
  • 3 tbsp rice flour
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (for greasing)
  • Optional: Ground cinnamon or pistachios for garnish

Instructions
 

  • Preparation Steps:
    In a saucepan, mix milk and sugar over medium heat. Stir until the sugar dissolves.
    Mix cornstarch and rice flour with water in a small bowl to create a slurry, then slowly add it to the milk mixture, stirring constantly.
    Cook the mixture until it thickens to a creamy, custard-like texture. Stir in vanilla extract.
    Grease a baking dish with butter and pour the pudding mixture into it. Let it cool slightly.
    Place the dish under a broiler for 5-7 minutes until the top becomes golden and crispy.
    Allow to cool to room temperature, then refrigerate for at least 4 hours to set.
    Once set, flip onto a plate, slice, and garnish with cinnamon or pistachios.

Notes

Kazandibi is best served chilled and makes for a delightful end to a big meal. The key to perfecting the dessert lies in the caramelized top, which should have a golden, crisp texture.
