Simmer for 10 minutes, then add rosewater and set aside.Toss Kunafa dough with melted butter.Grease a baking dish and layer half of the buttered dough.Add a mix of mozzarella, ricotta, and crushed pistachios. Top with the remaining dough.Bake for 30-35 minutes until golden.Drizzle cooled syrup over the Kunafa. Let cool before serving.
