Ingredients
  

  • 4 large potatoes (peeled & grated)
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 lb sausage (any preferred type)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large eggs
  • 1/2 cup heavy cream
  • Fresh herbs (optional)

Instructions
 

  • Preparation Steps:
    Prepare the Potato Crust: Grate potatoes, cook in olive oil until golden, press into a greased pie dish. Bake at 375°F for 10 minutes.
    Cook Sausage & Veggies: Brown sausage, add diced bell peppers, onion, and garlic. Sauté until tender.
    Egg Mixture: Whisk eggs and heavy cream. Stir in shredded cheese, then combine with sausage and veggies.
    Assemble & Bake: Pour the filling into the pre-baked potato crust. Bake at 375°F for 30-35 minutes until set and golden.
